This recipe was ohsogood and super fast… Not to mention packed with flavor and healthy goodness. If you are into meal prepping, this would be a great one to prepare in advance and reheat, but it doesn’t take long on its own!

Handful Lacinato kale
Handful baby spinach
2 stalks celery
1/4 red bell pepper
3.5 oz canned tuna in water
Red pepper flakes & salt
Drizzle small amount of oil in skillet on medium-high heat. Add chopped bell pepper, red pepper flakes and celery and cook for 1-2 minutes. Add tuna and pinch of salt. Stir until evenly spread in pan and add kale, spinach and 3Tbsp water. Cover for 1-2 minutes. Remove cover and stir. Mixture is finished when kale and spinach are fully wilted.
