Looking for something quick, clean and easy for dinner this week? Here’s the recipe for the most amazing, Paleo Coconut Curry Meatballs. I am not a garlic fan, so I never include it, but I know I’m in the minority there so I’ve included it in the recipe to satisfy the masses.

I seriously love these things and they are so easy to take to-go, to put over salad or zucchini noodles, and are seriously helping me get in all the protein I need to eat each day!

  • Ingredients:
  • 1 1/2 lb ground turkey
  • 1 carrot grated
  • 2 garlic cloves
  • 1/2 c shredded coconut
  • 1 egg
  • 2 tsp curry powder
  • 1/2 tsp salt
  • Handful cilantro

Put everything in a food processor and pulse until smooth. Using your hands form 24 meatballs, the smaller size of these will help them cook faster.

Heat several tbsp of coconut oil in a large skillet on medium high heat. When hot enough for meat to sizzle, place the meatballs in the pan.

Cook for two minutes and roll meatballs, cook for five more minutes. Put lid on pan and finish cooking for another 6-8 minutes.
